Recipe

  • Serves 2
  • I pack of smoked mackerel (discard skin)
  • Half an avocado or 3 tbsp of yoghurt/coconut yoghurt
  • Juice and zest of a lemon
  • 2 spring onions finely chopped
  • 1 tablespoon of capers, chopped

1. Blend the mackerel fillets with the avocado or yoghurt and lemon juice and zest in a mixer.
2. Season with salt and a generous helping of black pepper.
3. Stir in the spring onions and capers.
4. Serve with a large green salad or vegetable crudités.
